Dual voice coils simply sum voltages they receive.

You damage voice coils by feeding them more power than they can handle -- hooking up the two voice coils out of phase will do no damage.

Using different amplifiers for each voice coil is not dangerous either -- it doesn't matter if one amp is much more powerful than another.

You should adjust the levels of both amplifiers using the pre-amp (or level controls on the amplifier) so each channel (each voice coil) plays at roughly the same SPL (this is a minor issue because subwoofer bass frequencies are mono about 99% of the time on compact discs -- mono bass means playing one voice coil louder than the other will not change the music versus playing both voice coils at the same SPL.
